Abstract/Notes

Spices enhave the flavor of food and beverages and protect from acute and chronic diseases, due to their high antioxidant activity.  There is abundant data on their antioxidant activities and information related to their content of flavonoids and total polyphenols.  Many of the antioxidants found in spices are used in pre-clinical, clinical, and therapeutic trials investigating new treatments of diseases.  It is feasible to create new spice-based drugs for treatment of different conditions.  Spices and herbs should be incorporated as integral parts of healthy eating and as functional food ingredients.
