What do we know about coconut oil? Coconut oil comes from the meat of matured coconuts harvested from the coconut palm. It is used in food, medicine, and in industry. Coconut oil is high in saturated fat content, and because of it, it has a long shelf-life. Coconut oul has been demonized in the past because it contains saturated fat. In fact, coconut oil is one of the richest sources of saturated fat known to man. It has been shown that almost 90% of the fatty acids in coconut oil are saturated.
